2 tins Eve Tuna Chunk (drained)
2 tablespoons green seasoning
2 pimentos, finely chopped
½ cup breadcrumbs (plus extra if needed for binding)
1 egg
2 cloves garlic, minced
2 tablespoons mayonnaise
Salt and black pepper to taste

Directions
Directions:
Drain the 2 tins of Eve Tuna and place the tuna in a mixing bowl. Use a fork to flake it evenly.
Add green seasoning and finely chopped pimentos to the tuna. Mix well to evenly distribute the flavour.
Sprinkle in breadcrumbs start with ½ cup and adjust later if needed to help with binding.
Crack in 1 egg and mix thoroughly. The egg will help hold the mixture together.
Add finely minced garlic (1–2 cloves, depending on your taste) and stir into the mixture.
Mix in mayonnaise (about 1–2 tablespoons) for moisture and added flavour.
Season with salt and pepper to taste, mix well, then form into small patties.
Chill the patties in the fridge for 15–20 minutes to help them hold their shape while cooking.
Pan-fry the patties in a little oil over medium heat for 3–4 minutes per side, until golden brown and cooked through
