Ingredients

  • 4 lbs chicken pieces (cut up)
  • 6 tbs  fresh green seasoning
  • 1 onion chopped
  • 2 tbs minced garlic
  • 4 tbsp Eve ketchup
  • Hot pepper to taste
  • 2 tablespoons Eve oil
  • 1/2 cup Eve brown sugar
  • 4 stalks chive chopped
  • 1 stalk celery diced
  • 3 cups Eve parboiled rice
  • 1 can Eve dried pigeon peas
  • 1 medium carrot diced or 1 can Eve peas and carrots
  • 1 red bell pepper
  • 1 tbsp thyme chopped
  • 1 pack Eve coconut milk diluted with 3 cups water
  • Salt and pepper to taste

Directions

  • Prepare your chicken: Clean, cut-up and wash your chicken. Drain well. Add half of the green seasoning (3tbsp), 1/2 onion, garlic, ketchup, salt and pepper to your taste (do not taste raw chicken). Mix well to and marinate for at least an hour.
  • Heat Eve oil in a large heavy-bottomed pot over medium heat. Add Eve sugar and allow it to foam, bubble and brown (aim for deep brown but not black and burnt). If black, start over.
  • Quickly add the seasoned chicken, stirring to coat for about 5 minutes. Stir in chive, onion, balance of the green seasoning and celery. Cover and cook, stirring occasionally, for about 15 minutes,
  • Rinse, drain and add Eve rice to the pot along with Eve pigeon peas, carrots, chopped bell pepper, thyme and continue to cook, stirring for 3 minutes.
  • Mix Eve coconut milk with 3 cups water and add to pot, adding enough liquid to cover by 1 inch.
  • Season with salt and pepper to taste. Mix well.
  • Bring to a boil, reduce to simmer, cover pot tightly and cook for about 30 minutes or until rice is cooked and all the liquid has evaporated. Stir occasionally to ensure that it is not sticking.
  • Taste and add more seasoning if required.
