  • 2 tins Eve Tuna, drained
  • 2 tbsp Eve Corn, drained
  • 1 tbsp Eve Ketchup
  • 1 tbsp Eve Vinegar
  • ½ cup mayonnaise
  • 1 small red onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 2 pimento peppers, minced
  • 1 clove garlic, minced
  • 2 tsp shadon beni, minced
  • Fresh parsley, chopped
  • Juice of 1 lime
  • Salt and black pepper, to taste
  • Lime wedges, for serving

Directions

Method

  1. In a large bowl, combine all ingredients: Eve tuna, Eve corn, ketchup, vinegar, mayonnaise, onion, bell pepper, celery, pimento, garlic, shadon beni, parsley, lime juice, salt, and pepper. 
  2. Mix until well combined and creamy. 
  3. Chill until ready to serve. Garnish with a lime wedge and enjoy as a spread, dip, or salad topping!


TIP:

Serve on toast or Ritz Biscuits, as a filling for wraps or on a bed of lettuce for a low-carb option.
