Over Loaded Fries with Bean Salad

Ingredients

For the Bean Salad

  • 1 can Eve Chick Peas, drained
  • 1 can Eve Corn, drained
  • 1 can Eve Black Eye Peas, drained
  • ¼ cup red onion, diced
  • 2 tbsp parsley, chopped
  • 2 tbsp shadon beni, chopped
  • 1 tbsp Eve Vinegar
  • 1 tbsp lemon juice
  • 1 tsp Eve Granulated Sugar
  • ½ tsp salt
  • 2 tbsp Eve Soybean Oil
  • Jalapeño peppers, diced (optional, to taste)
  • ½ cup tomatoes, diced
  • 2 cloves garlic, minced

For the Cheese Sauce

  • 1 tbsp butter
  • 1 tbsp flour
  • 1 can Eve Evaporated Milk
  • 1 tbsp Eve Ketchup
  • ½ cup grated cheese, plus extra for topping
  • Salt and pepper, to taste

Directions

To Assemble

  • 1 pack sweet potato fries, prepared according to package instructions
  • 2 tbsp sour cream
  • Chopped chives, for garnish
  • Sriracha or your favourite hot sauce, to drizzle

 

Directions:

  1. In a saucepan over medium heat, melt the butter and whisk in the flour to form a light roux.
  2. Slowly pour in the Eve Evaporated Milk, stirring constantly until smooth and thickened.
  3. Add ketchup and ½ cup of cheese. Season with salt and pepper to taste. Stir until creamy. Remove from heat and set aside.
  4. In a mixing bowl, combine garlic, red onion, parsley, shadon beni, vinegar, lemon juice, oil, sugar, salt, and pepper.
  5. Add the chick peas, corn, black eye peas, jalapeños, and diced tomatoes. Mix well and adjust seasoning to taste.
  6. Prepare the sweet potato fries according to the instructions on the package.
  7. On a serving plate, layer the hot fries and drizzle generously with cheese sauce.
  8. Top with a sprinkle of grated cheese, a few spoonfuls of the bean salad, more cheese, a dollop of sour cream, and a drizzle of hot sauce.
  9. Finish with chopped chives for extra freshness.
