Directions:
- In a saucepan, combine 2 cups water, 1 cup of Eve Evaporated Milk, and Eve Long Grain Rice. Cook over low heat, stirring occasionally, until the rice is fully cooked and the liquid has been absorbed.
- Remove the pot from heat and stir in the Eve Condensed Milk, remaining E Evaporated Milk, vanilla extract, and Eve Chunky Peanut Butter until smooth.
- Allow to cool slightly.
- In a separate bowl, beat the eggs, then slowly combine with the rice mixture, stirring continuously to prevent curdling.
- Ladle the mixture into oven-safe bowls or ramekins. Place them in a large baking dish with high sides.
- Carefully pour hot water into the dish, filling halfway up the sides of the bowls to create a water bath.
- Bake at 350°F (175°C) for 30–35 minutes, or until the center is set.
- Make the Caramel Topping
- In a small pan, combine 1 cup sugar and ⅓ cup water. Cook over medium heat, without stirring, until the sugar melts and turns a golden amber colour.
- Immediately pour over the baked puddings and allow to cool completely.
- Refrigerate for at least 30 minutes.
- Garnish & Serve
- Sprinkle with flaked salt just before serving for the perfect balance of sweet and salty.
