Salted Toffee Peanut Rice Pudding

  • 2 cups Eve Evaporated Milk
  • ¾ can Eve Sweetened Condensed Milk
  • ½ cup Eve Long Grain Rice
  • ½ cup Eve Chunky Peanut Butter
  • 1 cup Eve Granulated Sugar
  • ½ tsp flaked salt (for finishing)
  • ⅓ cup water (for caramel)
  • 2 cups water (for cooking rice)
  • 2 eggs
  • 1 tsp vanilla extract

Directions

Directions:

  1. In a saucepan, combine 2 cups water, 1 cup of Eve Evaporated Milk, and Eve Long Grain Rice. Cook over low heat, stirring occasionally, until the rice is fully cooked and the liquid has been absorbed.
  2. Remove the pot from heat and stir in the Eve Condensed Milk, remaining E Evaporated Milk, vanilla extract, and Eve Chunky Peanut Butter until smooth.
  3. Allow to cool slightly.
  4. In a separate bowl, beat the eggs, then slowly combine with the rice mixture, stirring continuously to prevent curdling.
  5. Ladle the mixture into oven-safe bowls or ramekins. Place them in a large baking dish with high sides.
  6. Carefully pour hot water into the dish, filling halfway up the sides of the bowls to create a water bath.
  7. Bake at 350°F (175°C) for 30–35 minutes, or until the center is set.
  8. Make the Caramel Topping
  9. In a small pan, combine 1 cup sugar and ⅓ cup water. Cook over medium heat, without stirring, until the sugar melts and turns a golden amber colour.
  10. Immediately pour over the baked puddings and allow to cool completely.
  11. Refrigerate for at least 30 minutes.
  12. Garnish & Serve
  13. Sprinkle with flaked salt just before serving for the perfect balance of sweet and salty.

 

TIP:

This dessert can be enjoyed warm or chilled!
